Cranberry Pumpkin Muffins Ingredients
1 1/4 cups cranberries
2 cups flour
1 cup sugar
1/2 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 teaspoon cinnamon
1/2 teaspoon allspice
1/2 cup butter or margarine
2 eggs
1 2/3 cups pumpkin puree, cooked
How to Make Cranberry Pumpkin Muffins Directions
Preheat oven to 350° F.
Halve cranberries and set them aside.
Sift together flour, sugar, baking powder, baking soda, and spices.
In a separate bowl, mix together butter, eggs, and pumpkins.
Mix in dry ingredients until just combined. (A few lumps in muffin batter is fine)
Fold cranberry halves into the batter
Put muffin cups into muffin pans.
Fill muffin cups with batter until almost full.
Bake in the oven for 35 minutes.
Use a toothpick to test for doneness.
