Banana Bread Recipe

If you are like our family, you often have bananas in a fruit bowl on the counter. All too quickly, they get overripe. Don't' throw them out...... make Banana Bread!

From the Kitchen of: Debbie M., Rochester,NY.

Yield: 1 loaf


Banana Bread Ingredients:

  • 2 cups flour

  • 1/2 teaspoon grated rind of orange

  • 1/2 teaspoon grated rind of lemon

  • 1/4 teaspoon baking powder

  • 6 tablespoons margarine

  • 1/2 cup sugar

  • 1 1/3 cups finely mashed bananas


How to make Banana Bread:

  1. Pre-heat oven to 350 degrees.

  2. Sift together flour, baking powder and salt.

  3. Cream margarine, sugar and grated rinds.

  4. Beat in egg.

  5. Add flour and mashed bananas.

  6. Mix only until dry ingredients are wet. A little lumpy is fine.

  7. Pour batter into a greased 9 X 5 loaf pan.

  8. Bake for 55 minutes.

  9. Test for doneness with a toothpick.  

  10. Bake a little longer, if the toothpick doesn't come out clean. 

  11. Remove from oven and pan.

  12. Place on a wire rack to cool.
