Peppermint Candy Shortbread Cookies Recipe

This cookie is irresistible on the holiday cookie platter. Youngsters, and not so youngsters will grab some.

Yield: about 3 1/2 dozen cookies


Peppermint Candy Shortbread Cookie Ingredients:

  • 1 cup butter, softened

  • 1/4 cup granulated sugar

  • 1 teaspoon vanilla extract

  • 1/4 cup peppermint candy, crushed

  • 2 cups all -purpose flour

  • 1/4 cup corn starch

Peppermint Candy Shortbread Frosting Ingredients:

  • 1 cup confectioner's sugar

  • 1-  2 tablespoons milk

  • 1/2 teaspoon vanilla extract

  • 2 tablespoons peppermint candy, crushed


Peppermint Candy Shortbread Cookie Directions:

  1. Pre-heat oven to 300 degrees.

  2. Mix together butter, sugar, and vanilla with and electric mixer.

  3. Blend in crushed peppermint candy.

  4. Gradually blend in flour and corn starch.

  5. Roll into 1" balls, and place on a greased cookie sheet.

  6. Using a glass dipped on powdered sugar, press down on each cookie to flatten it.

  7. Bake in oven for 25 to 30 minutes, until bottom begins to brown.

  8. Remove cookies from oven and allow to cool little for 5 minutes.

  9. Mix all frosting ingredients, except peppermint candy in a mixing bowl.

  10. Drizzle frosting over center of each cookie.

  11. Sprinkle crushed peppermint candy on top of frosting.

  12. Allow to completely cool.
