Artichoke and Tarragon Butter Recipe
Yield: 4 servings
Artichoke Ingredients:

4 large artichokes
-
3 quarts water
-
1/4 cup olive oil
-
1 clove garlic
-
1/2 teaspoon salt
-
6 slices lemon
Tarragon Butter Ingredients:
How to make Artichokes with Tarragon Butter:

Add water, olive oil, garlic, salt and lemon slices in a large pot. Bring
to a boil.

Trim artichokes. Remove stalk and cut one inch from the top of the artichoke.
Snip off spikes of leaves, about 1/4 inch.

Wash artichokes in cold water.

Place artichokes in boiling water.

Simmer covers for 40 to 45 minutes, until base of artichoke is soft.

Remove and drain artichokes. Chill in freezer for several hours.

Make Tarragon butter just before serving.

Melt butter and pour into a small bowl.

Add olive oil, lemon juice and tarragon leaves.

Serve artichokes chilled with a small cup of tarragon butter on the side.
