Artichoke with Tarragon Butter Ingredients
Artichoke Ingredients:
4 large artichokes
3 quarts water
1/4 cup olive oil
1 clove garlic
1/2 teaspoon salt
6 slices lemon
Tarragon Butter Ingredients:
1/2 cup butter
2 tablespoons olive oil
2 tablespoons lemon juice
1 tablespoons tarragon leaves, chopped
How to Make Artichoke with Tarragon Butter
Add water, olive oil, garlic, salt, and lemon slices in a large pot. Bring to a boil.
Trim artichokes. Remove the stalk and cut one inch from the top of the artichoke. Snip off spikes of leaves, about 1/4 inch.
Wash artichokes in cold water.
Place artichokes in boiling water.
Simmer covers for 40 to 45 minutes, until the base of the artichoke is soft.
Remove and drain artichokes. Chill in the freezer for several hours.
Make Tarragon butter just before serving.
Melt butter and pour into a small bowl.
Add olive oil, lemon juice, and tarragon leaves.
Serve artichokes chilled with a small cup of tarragon butter on the side.
